Pastry Chef
Permanent, Full Time

A fantastic opportunity to join a new specialty dessert-house coming to Milton Keynes. The Green Cocoa Lab is a one-of-a-kind dessert-house providing a safe and secure environment for customers and its team, they are the tastiest zero-food-waste dessert-house around. 

We are looking for an experienced Pastry Chef that is enthusiastic, well presented, creative and passionate in their work with knowledge of the industry.

Flexible working patterns available.

Previous work in a busy kitchen is essential.

What we’ll need you to be great at!

  • Opening and closing the kitchen;
  • Leading and supervising the kitchen team;
  • Taking full ownership of the kitchen operation in the absence of the Kitchen Manager/Owner;
  • Scheduling dessert batch production on a daily basis in the absence of the Kitchen Manager/Owner;
  • Food preparation, both production and service;
  • Assist in the writing and costing of menu’s and dishes and provide detailed recipe spec sheets;
  • Ensure all dishes are prepared and served to a consistently high standard;
  • Work closely with the front of house team to ensure outstanding customer service;
  • Ensure the kitchen and all equipment is well maintained and cleaned thoroughly;
  • Ensure food safety and H&S paperwork is completed;
  • Following all food safety, allergens and H&S procedures;
  • Ensure the safety and security of the building at all times;
  • Recruitment of Kitchen Team;
  • Stock Control & Orders;
  • Training;
  •  Ensuring Budgets/Targets are met;

Experience:

  • Food Safety & H&S Regulations
  • Pastry Experience 2 years


Qualifications:

  • GCSE Level;
  • Level 2 Food Safety is essential
  • Level 3 Food Safety (desirable)
  • Degree or HND in Culinary Arts or Professional cookery (desirable); and
  • NVQ level 2/3 in professional cookery or equivalent (desirable).

Pastry Chef de Partie
Permanent, Full Time

We are looking for an experienced Pastry Chef de Partie that is enthusiastic, well presented, creative and passionate in their work with knowledge of the industry.

Flexible working patterns available.

Previous work in a busy kitchen is essential.

What we’ll need you to be great at!

  • Preparation and batch cooking of dessert dishes to approved recipe specs
  • Preparation, cooking and plating of dishes within service to a consistently high standard
  • Opening and closing the kitchen in the absence of the senior team
  • Lead and supervise the Commis Chefs and Kitchen Porters
  • Ensure food is served to standard and is consistent
  • Check in deliveries ensuring correct items, quantities & temperatures and report discrepancies 
  • Assist with weekly stocktakes  and ensure wastage is kept to a minimum 
  • Work closely with the front of house team to ensure outstanding customer service
  • Ensure the kitchen and all equipment is well maintained and cleaned thoroughly
  • Follow all food safety standards and allergen procedures and complete paperwork

A fantastic opportunity to join a new specialty dessert-house [MP1] coming to Milton Keynes. The Green Cocoa Lab is a one-of-a-kind dessert-house providing a safe and secure environment for customers and its team, they are the tastiest zero-food-waste dessert-house around. 

We are looking for an experienced Commis Chef that is enthusiastic, well presented, creative and passionate in their work with knowledge of the industry.

Flexible working patterns available.

Previous work in a busy kitchen is essential.

What we’ll need you to be great at!

  • Cooking and serving food consistently and to company specification;
  • Stock control and rotation;
  • Maintaining high levels of food hygiene;
  • Filling out daily records;
  • Maintaining a clean, safe and friendly working environment;
  • Preparing a wide variety food in a timely manner;
  • Ensuring Wastage is kept to a minimum;
  • Check in of Deliveries;
  • Assist with weekly stocktakes;
  • Have a passion for hospitality; and 
  • Team player

  • Chef: 2 years
